Serves 4 people


3 English cucumbers, halved and sliced ¼ inch thick
1 small red onion, sliced very thinly
2 tbsp sugar
½ cup rice vinegar
½ bunch mint, chopped finely
Salt and pepper

Optional Ingredients

½ bunch cilantro
¼ cup chopped peanuts
1 tbsp fish sauce
1 tsp sambal, garlic chili paste


In a large bowl, combine cucumbers, red onion, sugar, mint, and rice vinegar. Season with salt and pepper and toss to combine.
