Serves 8 people


For the lamb

2-3 pounds of Lamb Sirloin
½ cup olive oil
½ cup yogurt
6 cloves of garlic
2 tablespoons Ras El Hanout(coriander, cumin, cardamom)
1 teaspoon paprika
½ teaspoon cayenne
¼ cup chopped fresh mint
2 teaspoons salt
1 teaspoon fresh black pepper
zest of 2 lemons
juice of 1 lemon

For the Persian yogurt sauce

3 cups yogurt
1 cup peeled and diced cucumber
1/2 cup finely chopped fresh herbs ( mint, cilantro, parsley)
zest of 1 lemon plus the juice
Salt and pepper to taste

Bamboo skewers
Small  bowl for yogurt sauce
platter for service
tongs for service
small spoon for service


For the lamb

Soak your bamboo skewers in water for 30 minutes. Blend all ingredients except the lamb together to create a paste. Rub into lamb and allow to marinate for at least a half an hour. Pre-heat your grill. Skewer the lamb and grill until perfectly cooked.

For the Persian yogurt sauce

Mix all ingredients together.
